Cajun Fried Turkey Wings

– 4 large turkey wings, split at the joint
– 2 cups buttermilk
– 2 tablespoons hot sauce
– 2 cups all-purpose flour
– 1 tablespoon Cajun seasoning
– 1 teaspoon garlic powder
– 1 teaspoon onion powder
– 1 teaspoon smoked paprika
– Salt and pepper to taste
– Vegetable oil, for frying

1. In a large bowl, whisk together buttermilk and hot sauce. Add turkey wings, making sure they are fully submerged. Cover and marinate in the refrigerator for at least 4 hours, preferably overnight.
2. In a large zip-lock bag, mix together flour, Cajun seasoning, garlic powder, onion powder, smoked paprika, salt, and pepper.
3. Remove turkey wings from the buttermilk mixture, allowing excess to drip off. Place wings, a few at a time, into the flour mixture bag. Seal the bag and shake to coat wings evenly.
4. Heat vegetable oil in a deep fryer or large pot to 375°F (190°C).
5. Fry the turkey wings in batches until golden brown and cooked through, about 10 to 15 minutes per batch. Ensure the internal temperature of the meat reaches 165°F (74°C).
6. Drain on paper towels and serve hot.
