1 1/2 cups all-purpose flour

°1/2 cup powdered sugar

°1/2 cup unsalted butter, chilled and cut into small pieces

°4 large eggs

°1 cup granulated sugar

°2 tablespoons of all-purpose flour

°1/2 cup of lemon juice

°1 tablespoon grated lemon peel

°1/2 cup heavy cream

° powdered sugar

directions :

Preheat the oven to 350°F (175°C) and grease an 8″ x 8″ square baking pan.

In a medium bowl, mix 1 1/2 cups flour and 1/2 cup powdered sugar. Cut in the cooled butter until the mixture resembles coarse crumbs. Press the mixture into the prepared baking tray.

Bake for 18-20 minutes, or until light golden brown.

In a separate mixing bowl, whisk together the eggs, granulated sugar, 2 tablespoons of the flour, lemon juice, lemon zest, and heavy cream. Pour mix over the baked crust.

Return to oven and bake for an additional 20-25 minutes, or until filling is cooked through and golden brown.

We take it out of the oven and let it cool to room temperature.

Sprinkle with powdered sugar before slicing and serving.
