Spicy Birria Wings with Rich Consomé


– 2 lbs chicken wings
– 2 tablespoons olive oil
– For the Birria Marinade:
– 4 dried Guajillo chiles
– 2 dried Ancho chiles
– 1/4 cup apple cider vinegar
– 3 garlic cloves
– 1 teaspoon cumin
– 1 teaspoon oregano
– 1/2 teaspoon ground cloves
– Salt and pepper to taste
– For the Consomé:
– 4 cups chicken broth
– 2 tomatoes, quartered
– 1 onion, quartered
– 3 garlic cloves
– 1 cinnamon stick
– Salt and pepper to taste


1. Prepare the Birria Marinade: Soak the dried chiles in hot water until softened. Remove stems and seeds, then blend with vinegar, garlic, cumin, oregano, cloves, salt, and pepper until smooth.
2. In a bowl, toss the chicken wings with olive oil and the Birria marinade. Marinate for at least 4 hours, preferably overnight.
3. Preheat oven to 425°F (220°C). Arrange the wings on a baking sheet and roast for 25-30 minutes, until crispy and cooked through.
4. While wings are roasting, prepare the Consomé: Combine all consomé ingredients in a pot and bring to a boil. Reduce heat and simmer for 30 minutes. Strain and keep warm for serving.
5. Serve the wings with the warm Consomé for dipping.
