Herb Butter Steak Tips with Roasted Potatoes
Ingredients:
For the Steak Tips:
1 ½ lbs steak tips (sirloin or ribeye), cut into bite-sized pieces
2 tbsp olive oil
4 tbsp unsalted butter, softened
2 garlic cloves, minced
2 tbsp fresh parsley, chopped
1 tbsp fresh thyme, chopped
1 tsp fresh rosemary, chopped
Salt and pepper to taste
For the Roasted Potatoes:
1 ½ lbs baby potatoes, halved
2 tbsp olive oil
1 tsp garlic powder
1 tsp paprika
Salt and pepper to taste
Fresh parsley for garnish (optional)
Instructions:
Roast the Potatoes:
Preheat your oven to 425°F (220°C). Toss the halved baby potatoes in a bowl with olive oil, garlic powder, paprika, salt, and pepper. Spread the potatoes in a single layer on a baking sheet. Roast for 25-30 minutes, flipping halfway through, until golden and crispy.
Cook the Steak Tips:
While the potatoes are roasting, heat olive oil in a large skillet over medium-high heat. Season the steak tips with salt and pepper. Sear the steak tips for 3-4 minutes per side, or until cooked to your preferred level of doneness. Remove from the skillet and set aside.
Prepare the Herb Butter:
In a small bowl, mix together softened butter, minced garlic, fresh parsley, thyme, and rosemary. Add a pinch of salt and pepper to taste.
Toss the Steak in Herb Butter:
Once the steak tips are cooked, return them to the skillet. Add the herb butter and toss the steak tips in the melted butter until they are evenly coated.
Serve:
Serve the herb butter steak tips hot, alongside the roasted potatoes. Garnish with fresh parsley if desired.
Notes:
For extra flavor, drizzle a little lemon juice over the steak tips before serving!
