Bruschetta Chicken Pasta

Ingredients:
– 2 chicken breasts
– 8 oz (225 g) pasta (penne or rotini)
– 1 cup cherry tomatoes, halved
– 1/4 cup fresh basil, chopped
– 2 cloves garlic, minced
– 1/4 cup balsamic vinegar
– 1/4 cup olive oil
– 1/2 tsp salt
– 1/4 tsp black pepper
– 1/2 cup shredded mozzarella cheese
– Optional: Grated Parmesan cheese for topping

Directions:
1. Cook the pasta according to package instructions. Drain and set aside.
2. In a bowl, mix together the balsamic vinegar, olive oil, garlic, salt, and pepper.
3. Heat a skillet over medium heat. Add the chicken breasts and pour half of the balsamic mixture over them.
4. Cook the chicken for about 6-7 minutes on each side, or until fully cooked and no longer pink in the center.
5. Remove the chicken from the skillet and let it rest for a few minutes. Then, slice it into strips.
6. In the same skillet, add the cherry tomatoes and cook for 2-3 minutes until they start to soften.
7. Add the cooked pasta and the remaining balsamic mixture to the skillet. Toss everything together to combine.
8. Stir in the fresh basil and mozzarella cheese, and then top with sliced chicken.
9. If desired, sprinkle with grated Parmesan cheese before serving.
