German Potato Pancakes

1kg potatoes, peeled and grated
1 small onion, grated
2 large eggs
1/4 cup all-purpose flour
1 teaspoon salt
1/2 teaspoon ground black pepper
1/2 teaspoon garlic powder (optional)
Vegetable oil for frying

Place the grated potatoes in a clean kitchen towel and squeeze out as much liquid as possible. Transfer the potatoes to a large bowl.
Add the grated onion, eggs, flour, salt, pepper, and garlic powder (if using) to the bowl with the potatoes. Mix well to combine.
In a large skillet, heat about 1/4 of vegetable oil over medium-high heat.
Drop heaping tablespoons of the potato mixture into the hot oil, flattening each mound with the back of a spoon to form a pancake.
Fry the pancakes until golden brown and crispy, about 3-4 minutes per side. Drain on paper towels.
Serve the potato pancakes hot with applesauce or sour cream.
