Spinach Stuffed Chicken Breasts

Ingredients:
For the Chicken:
4 boneless, skinless chicken breasts
2 tbsp olive oil
Salt and black pepper, to taste
For the Spinach Filling:
1 tbsp olive oil
1 small onion, finely chopped
2 cloves garlic, minced
5 oz fresh spinach (or 1 package frozen spinach, thawed and drained)
1/2 cup ricotta cheese
1/2 cup cream cheese, softened
1/2 cup shredded mozzarella cheese (or parmesan for a sharper flavor)
1/2 tsp garlic powder
1/4 tsp nutmeg (optional)
Salt and black pepper, to taste
Instructions:
1. Prepare the Chicken Breasts:
Preheat your oven to 375°F (190°C).
Cut a pocket into each chicken breast by slicing horizontally through the middle, making sure not to cut all the way through. You want to create a pouch for the filling.
Season both sides of the chicken breasts with salt and black pepper.
2. Prepare the Spinach Filling:
In a large skillet, heat 1 tbsp olive oil over medium heat.
Add the chopped onion and cook until softened, about 3-4 minutes.
Add the garlic and cook for another 30 seconds until fragrant.
Add the spinach and cook until wilted (if using fresh), or until the frozen spinach is fully heated and any excess moisture has evaporated.
Remove from heat and let the spinach mixture cool slightly.
In a bowl, combine the ricotta, cream cheese, mozzarella, garlic powder, nutmeg (if using), and the spinach mixture. Stir until well combined. Season with salt and pepper to taste.
3. Stuff the Chicken:
Carefully stuff each chicken breast with the spinach mixture, dividing the filling evenly among the breasts.
Use toothpicks to secure the open edges of the chicken breasts if needed.
4. Cook the Chicken:
Heat 2 tbsp olive oil in an oven-safe skillet over medium-high heat.
Add the stuffed chicken breasts to the skillet and sear them for 2-3 minutes on each side, until golden brown.
Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).
5. Serve:
Remove the toothpicks from the chicken before serving.
Serve the stuffed chicken with your choice of sides, such as roasted vegetables, mashed potatoes, or a simple salad.
