Garlic Parmesan Chicken with Cheesy Scalloped Potatoes

For the Garlic Parmesan Chicken:
4 boneless chicken breasts
1/2 cup grated Parmesan cheese
1/2 cup heavy cream
3 garlic cloves, minced
1 tsp Italian seasoning
Salt and pepper, to taste
2 tbsp olive oil
Fresh parsley, chopped (for garnish)
For the Cheesy Scalloped Potatoes:
4 large potatoes, thinly sliced
1 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese
1 cup heavy cream
3 garlic cloves, minced
Salt and pepper, to taste
2 tbsp unsalted butter
Fresh thyme or parsley, for garnish

Garlic Parmesan Chicken:
Preheat the oven to 375°F (190°C).
Season the chicken breasts with salt, pepper, and Italian seasoning.
Heat olive oil in a skillet over medium heat. Sear the chicken for 4-5 minutes on each side until golden.
In a small bowl, mix heavy cream, Parmesan cheese, and minced garlic.
Pour the creamy garlic mixture over the seared chicken.
Transfer to the oven and bake for 20-25 minutes, until the chicken is cooked through.
Garnish with fresh parsley before serving.
Cheesy Scalloped Potatoes:
Preheat the oven to 375°F (190°C) if you haven’t already.
Butter a baking dish and arrange thin slices of potatoes in layers.
In a saucepan, heat the heavy cream and minced garlic until simmering. Season with salt and pepper.
Pour the garlic cream over the potatoes and sprinkle the cheeses between layers.
Bake uncovered for 45-50 minutes, until the top is golden and bubbly.
Garnish with fresh thyme or parsley.
