Crockpot Creamy Potato & Hamburger Soup
Ingredients:
• 1 lb ground beef
• 1 onion, diced
• 3 cloves garlic, minced
• 6 cups potatoes, peeled and cubed
• 3 carrots, sliced
• 3 celery stalks, chopped
• 1 teaspoon dried thyme
• 1 teaspoon dried rosemary
• 1 bay leaf
• 6 cups beef broth
• 1 cup heavy cream
• Salt and pepper to taste
• Fresh parsley for garnish
Directions:
1. In a skillet, brown the ground beef over medium-high heat until fully cooked. Drain excess fat and set aside.
2. In a large crockpot, combine the diced onion, minced garlic, cubed potatoes, sliced carrots, chopped celery, dried thyme, dried rosemary, and bay leaf.
3. Add the cooked ground beef to the crockpot.
4. Pour in the beef broth and stir to combine all the ingredients.
5. Cover and cook on low for 7-8 hours or until the potatoes and vegetables are tender.
6. About 30 minutes before serving, stir in the heavy cream and season with salt and pepper.
7. Remove the bay leaf.
8. Ladle the creamy potato and hamburger soup into bowls, garnish with fresh parsley, and serve hot.
