Tender beef rolls stuffed with herbs and cheese, simmered in a rich tomato sauce
Ingredients:
• Braciole:
• 1 lb beef top round, thinly sliced (450 g)
• 1/4 cup Parmesan cheese, grated (30 g)
• 1/4 cup breadcrumbs (30 g)
• 2 garlic cloves, minced
• Fresh parsley, chopped
• Salt and pepper, to taste
• Tomato Sauce:
• 1 can crushed tomatoes (28 oz/800 g)
• 1/2 onion, chopped
• 2 tbsp olive oil
• Salt and pepper, to taste
Instructions:
1. Prepare the Filling: In a small bowl, combine Parmesan, breadcrumbs, garlic, parsley, salt, and pepper.
2. Assemble Braciole: Lay out beef slices. Place a small amount of filling on each piece, then roll up and secure with toothpicks.
3. Sear Braciole: In a skillet, heat olive oil. Sear beef rolls until browned on all sides.
4. Make the Sauce: Add onions to the skillet and cook until softened. Add crushed tomatoes, salt, and pepper. Bring to a simmer.
5. Simmer Braciole: Place the beef rolls into the sauce. Cover and simmer for 1-1.5 hours until tender.
6. Serve: Remove toothpicks before serving. Garnish with more Parmesan if desired.
Note: Braciole tastes even better the next day as flavors develop overnight!
