Cajun Shrimp Scampi

– 1 lb large shrimp, peeled and deveined
– 2 tablespoons Cajun seasoning
– 4 tablespoons unsalted butter
– 5 cloves garlic, minced
– 1/2 cup chicken broth
– 1 tablespoon lemon juice
– 1/4 cup parsley, chopped
– 1/4 teaspoon red pepper flakes (optional)
– Salt to taste
– 8 oz linguine, cooked al dente Directions:
1. Season the shrimp with Cajun seasoning.
2. In a large skillet over medium heat, melt 2 tablespoons of butter. Add the shrimp and cook until they are pink, about 2-3 minutes per side. Remove shrimp from the skillet and set aside.
3. In the same skillet, add the remaining butter and garlic. Sauté for 1 minute until fragrant.
4. Add chicken broth and lemon juice, bringing to a simmer. Let it reduce by half, about 2-3 minutes.
5. Return the shrimp to the skillet, add parsley, and red pepper flakes if using. Toss to combine and heat throuah.
6. Serve the shrimp and sauce over cooked linguine.
