Roasted Garlic Butter Ribeye Steak Recipe

For a memorable family BBQ night, try this roasted garlic butter ribeye steak recipe. I enjoy having my wife and kids make the honey garlic butter while I grill the ribeye steaks. The key is that everyone gets involved, creating a fun and collaborative atmosphere, resulting in a delicious meal.

Having the whole family participate in the grilling process is great. It allows everyone to contribute, and we all come together to enjoy a wonderful meal. Sometimes, I handle the steaks while my wife prepares the sides and the kids play. The honey garlic butter is quick and easy to make, keeping the kids engaged.

**Grilling Ribeye Steaks**

The grilling method depends on the thickness of the steak. For steaks 1″ or thinner, grill directly over the coals, flipping every 60-90 seconds for 6-8 minutes until medium rare. For thicker steaks, sear first, then finish with a hard sear or smoke until medium rare.

Before grilling, ensure the steaks are at room temperature and properly seasoned. Use avocado oil as a binder to help the seasoning stick and enhance the flavor. Generously season the steak on all sides and let it sit at room temperature for 20-30 minutes.

Prepare the grill for searing (for steaks less than 1″) or smoking (for thicker steaks). I seared my thicker steaks over direct coals for 60-90 seconds per side, then moved them to the indirect zone for a low and slow approach. When the steaks reach an internal temperature of 128°F, add roasted garlic butter and let them finish cooking.

**Making Roasted Garlic Butter**

Preheat the oven to 325°F. Peel two whole garlic bulbs and place the cloves in an oven-safe pan with olive oil. Roast in the oven for 25-30 minutes until bubbling and turning golden. Let cool for 10 minutes.

Mix a block of room-temperature unsalted butter with 8 roasted garlic cloves, rosemary, thyme, Mexican chili powder, black pepper, salt, and 1/2 a shallot. Let it sit until ready to use, or shape it into a log, wrap in plastic, and refrigerate.
