Creamy Sausage and Potato Soup

Ingredients:😋

1 lb ground sausage (turkey or chicken sausage as a substitute if desired)
1 medium onion, diced
2 garlic cloves, minced
4 medium potatoes, peeled and diced
4 cups chicken broth
1 cup heavy cream
1/2 tsp smoked paprika (optional)
Salt and pepper to taste
Optional: Chopped parsley or shredded cheese for garnish

Directions:😋

In a large pot or Dutch oven, cook the sausage over medium heat until browned and crumbled. Remove and set aside.
In the same pot, sauté the diced onion and minced garlic until softened, about 3-4 minutes.
Add the diced potatoes and chicken broth to the pot. Bring to a boil, then reduce the heat to low and simmer for 15-20 minutes, or until the potatoes are tender.
Using a potato masher, lightly mash some of the potatoes in the pot to create a creamier texture, leaving some chunks for a hearty feel.
Stir in the cooked sausage and heavy cream. Simmer for another 5 minutes, stirring occasionally.
Season with smoked paprika (if using), salt, and pepper to taste.
Serve hot, garnished with parsley or shredded cheese if desired.
