Salmon and Steak Skillet in Spicy Red Pesto Sauce

Ingredients:

For the Salmon and Steak:

2 salmon fillets, skin on
2 ribeye steaks
1 tbsp olive oil (for searing)
Salt and pepper to taste
For the Spicy Red Pesto Sauce:

1/2 cup sun-dried tomatoes (packed in oil), drained and chopped
1/4 cup roasted red peppers, chopped
1/4 cup fresh basil leaves
1/4 cup olive oil
2 tbsp red wine vinegar
1 garlic clove, minced
1/2 tsp red pepper flakes (adjust based on desired spice level)
1/4 tsp smoked paprika
Salt and pepper to taste

Instructions:😋

Prepare the Spicy Red Pesto Sauce:

In a blender or food processor, combine sun-dried tomatoes, roasted red peppers, basil, olive oil, red wine vinegar, garlic, red pepper flakes, smoked paprika, salt, and pepper.
Blend until smooth and creamy. Taste and adjust seasoning, adding more salt, pepper, or red pepper flakes if desired. Set aside.
Cook the Steak:

Season the ribeye steaks with salt and pepper on both sides.
Heat a large skillet over medium-high heat and add the olive oil.
Sear the steaks for about 4-5 minutes per side for medium-rare, or longer for your preferred doneness. Once cooked, remove the steaks from the skillet and let them rest while you prepare the salmon.
Cook the Salmon:

Season the salmon fillets with salt and pepper.
In the same skillet, add a little more olive oil if necessary and heat over medium heat.
Place the salmon fillets skin-side down and cook for 4-5 minutes, depending on thickness. Flip and cook for another 2-3 minutes until fully cooked and the salmon easily flakes.
Combine the Steak and Salmon:

Once the salmon and steak are cooked, return the steaks to the skillet. Drizzle the spicy red pesto sauce over both the steak and the salmon, allowing the sauce to warm up and slightly coat the proteins.
Serve:

Plate the salmon and steak, then drizzle more spicy red pesto sauce on top. Garnish with fresh basil or parsley for a pop of color.
Optional:

Serve the skillet with a side of roasted vegetables, mashed potatoes, or a fresh salad.😋😋
