Loaded beef and potato bake
**Ingredients:**
– 1 lb ground beef
– 4 large russet potatoes, peeled and sliced thin
– 1 cup shredded cheddar cheese
– 1/2 cup sour cream
– 1/2 cup milk
– 1 tbsp olive oil
– 1/2 cup onion, chopped
– 2 cloves garlic, minced
– 1 tsp paprika
– 1/2 tsp black pepper
– Salt to taste
– 1/2 cup cooked bacon crumbles
– 1/4 cup green onions, chopped
– 1/4 cup fresh parsley, chopped

**Instructions:**
**1. Preheat the Oven:**
– Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish with cooking spray or butter.
**2. Cook the Ground Beef:**
– In a large skillet, heat olive oil over medium heat. Add the ground beef, onion, and garlic. Cook until the beef is browned and crumbled, about 5-7 minutes. Drain any excess fat and season with paprika, salt, and pepper. Remove from heat and set aside.
**3. Prepare the Potatoes:**
– In a separate bowl, mix together the sour cream and milk. Layer half of the sliced potatoes in the bottom of the prepared baking dish. Spread half of the sour cream mixture over the potatoes.
**4. Layer the Ingredients:**
– Spread half of the cooked beef mixture over the potatoes. Repeat the layers: add the remaining potatoes, followed by the sour cream mixture, and top with the remaining beef.
**5. Bake the Dish:**
– Cover the baking dish with aluminum foil and bake in the preheated oven for 45-50 minutes, or until the potatoes are tender.
**6. Add Cheese and Bake Again:**
– Remove the foil and sprinkle shredded cheddar cheese over the top. Return to the oven and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
**7. Garnish and Serve:**
– Remove from the oven and let it cool for a few minutes. Garnish with cooked bacon crumbles, green onions, and fresh parsley before serving.
