Rich, Savory, and Perfect for Cold Nights
This flavorful soup combines sweet caramelized onions with the spicy kick of chorizo and a golden, cheesy topping.
Ingredients:
For the Soup:
3 large yellow onions, thinly sliced
2 tbsp unsalted butter
1 tbsp olive oil
6 oz Spanish chorizo, sliced into rounds
2 cloves garlic, minced
1 tsp smoked paprika
1/4 tsp red pepper flakes (optional, for extra heat)
4 cups beef or chicken broth
1/2 cup dry white wine (optional)
2 sprigs fresh thyme (or 1 tsp dried thyme)
1 bay leaf
Salt and black pepper, to taste
For the Topping:
4-6 slices crusty baguette, toasted
1 1/2 cups shredded Gruyère or Manchego cheese
Fresh parsley, chopped (for garnish)
Instructions:
Caramelize the Onions:
Heat butter and olive oil in a large pot over medium heat. Add the sliced onions and a pinch of salt.
Cook for 20-25 minutes, stirring occasionally, until the onions are soft, deep golden, and caramelized.
Stir in the minced garlic, smoked paprika, and red pepper flakes. Cook for 1-2 minutes until fragrant.
Cook the Chorizo:
While the onions are caramelizing, heat a skillet over medium heat and cook the chorizo slices until crispy, about 2-3 minutes per side.
Remove the chorizo from the pan and set aside, reserving any rendered oil.
Deglaze and Simmer:
Pour the white wine into the pot with the onions to deglaze, scraping up any browned bits. Let it simmer for 2-3 minutes.
Add the broth, thyme, and bay leaf. Simmer for 10-15 minutes to let the flavors meld. Season with salt and pepper to taste.
Prepare the Bowls:
Preheat your oven broiler.
Ladle the soup into oven-safe bowls. Top each bowl with a few chorizo slices, a toasted baguette slice, and a generous amount of shredded Gruyère or Manchego cheese.
Broil to Perfection:
Place the bowls on a baking sheet and broil for 2-3 minutes, or until the cheese is bubbly and golden brown.
Garnish and Serve:
Garnish with fresh parsley and extra crispy chorizo. Serve hot with additional toasted bread for dipping.
