Garlic Butter Steak and Potatoes Skillet

Ingredients:

1½ lbs (680g) sirloin steak, cut into 1-inch cubes
1½ lbs (680g) baby gold potatoes, quartered
4 tablespoons unsalted butter, divided
2 tablespoons olive oil
4 cloves garlic, minced
1 teaspoon fresh thyme, chopped
1 teaspoon fresh rosemary, chopped
Salt and freshly cracked black pepper, to taste
1 teaspoon smoked paprika (optional)
Fresh parsley, chopped (for garnish)
Instructions:

Prepare the Potatoes:

Heat 1 tablespoon olive oil in a large skillet over medium heat.
Add the potatoes, season with salt, pepper, and paprika (if using).
Cook for 8-10 minutes, stirring occasionally, until golden brown and tender.
Remove potatoes from the skillet and set aside.
Sear the Steak:

Season the steak cubes with salt and pepper.
In the same skillet, heat 1 tablespoon olive oil and 2 tablespoons butter over medium-high heat.
Add the steak cubes in a single layer and sear for 1-2 minutes per side until browned but not fully cooked.
Remove steak from the skillet and set aside.
Make Garlic Butter Sauce:

Lower the heat to medium and add the remaining butter to the skillet.
Stir in the minced garlic, thyme, and rosemary. Cook for 1-2 minutes until fragrant.
Combine and Finish:

Return the potatoes and steak to the skillet.
Toss to coat everything in the garlic butter sauce and cook for an additional 2-3 minutes to combine flavors.
Adjust seasoning with salt and pepper as needed.
Serve:

Garnish with freshly chopped parsley and serve hot.
Notes:

Ensure the steak is cut uniformly for even cooking.
To make ahead, cook potatoes partially and finish with the steak for fresh, crispy textures.
