✅️✅️Crockpot French Onion Meatloaf with Melted Swiss Cheese
Ingredients:
2 pounds ground beef
1 cup breadcrumbs
1/2 cup grated Parmesan cheese
1/4 cup milk
2 large eggs
1 tablespoon Worcestershire sauce
1 teaspoon salt
1/2 teaspoon black pepper
2 large onions, thinly sliced
2 tablespoons butter
1 cup beef broth
8 slices Swiss cheese
Instructions:
Prepare the Meatloaf Mixture: In a large bowl, combine ground beef, breadcrumbs, grated Parmesan cheese, milk, eggs, Worcestershire sauce, salt, and black pepper. Mix until well combined.
Shape the Meatloaf: Form the mixture into a loaf shape and place it in the center of your crockpot.
Caramelize the Onions: In a skillet over medium heat, melt butter. Add thinly sliced onions and cook until caramelized, about 10-15 minutes. Pour in beef broth to deglaze the pan, scraping up any browned bits.
Assemble in Crockpot: Pour the caramelized onions and beef broth over the meatloaf in the crockpot.
Cook: Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the meatloaf reaches an internal temperature of 160°F (71°C).
Add Cheese: About 10 minutes before serving, place Swiss cheese slices on top of the meatloaf. Cover and let the cheese melt.
Serve: Carefully remove the meatloaf from the crockpot, slice, and serve warm.
Notes:
For a richer flavor, use Gruyère cheese instead of Swiss.
Serve with mashed potatoes or roasted vegetables for a complete meal.
