French Toast Breakfast Sandwiches
Ingredients:
French Toast:
4 large eggs
½ cup milk
1 tsp vanilla extract
1 tsp cinnamon
8 slices of bread (brioche or Texas toast works well)
Butter for cooking
Sandwich Filling:
4 slices of cooked bacon or sausage patties
4 slices of ham (optional)
4 slices of cheddar or American cheese
4 large eggs, scrambled or fried
Maple syrup, for serving (optional)
Instructions:
Prepare the French Toast Batter: In a shallow bowl, whisk together eggs, milk, vanilla extract, and cinnamon until well combined.
Dip and Cook the Bread: Heat a nonstick skillet or griddle over medium heat and add a bit of butter. Dip each slice of bread into the egg mixture, coating both sides, then place onto the hot skillet. Cook for 2-3 minutes per side until golden brown. Repeat for all bread slices and set aside.
Cook the Eggs: In a separate skillet, cook scrambled or fried eggs until done to your liking. Season with salt and pepper to taste.
Assemble the Sandwiches:
Take one slice of French toast and layer with a slice of cheese, a cooked egg, a slice of ham (if using), and a slice of bacon or sausage patty. Top with another slice of French toast.
Repeat for each sandwich.
Serve: Serve warm, with a drizzle of maple syrup if you like a sweet-savory flavor combination.
Notes:
Customize with spinach, tomatoes, or avocado for added freshness.
For an extra indulgent touch, add a smear of cream cheese or hot sauce to the inside of the sandwich.
