Country Apple Fritter Bread Recipe
Ingredients:
– 1/2 cup softened butter
– 2/3 cup white sugar
– 2 large eggs (room temperature)
– 1 1/2 teaspoons vanilla extract
– 1 1/2 cups all-purpose flour
– 1 3/4 teaspoons baking powder
– 1/2 cup milk (whole, oat, or coconut)
– 1/2 cup sour cream or Greek yogurt
– 1/3 cup light brown sugar
– 1 teaspoon ground cinnamon
– 2 large Granny Smith apples, peeled, cored, and chopped
– 1 cup powdered sugar (for glaze)
– 2 tablespoons milk (for glaze)

1. Preheat and Prepare
Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan with non-stick spray or line with parchment paper.
2. Mix Wet Ingredients
Cream butter and white sugar until light and fluffy. Add eggs one at a time, mixing well after each. Mix in vanilla extract.
3. Combine Dry Ingredients
Whisk flour and baking powder. Gradually add to wet mixture, alternating with milk, until just combined. Fold in sour cream or Greek yogurt.
4. Prepare Apple Mixture
Mix light brown sugar and cinnamon. Pat apples dry with paper towels. Toss apples in cinnamon mixture.
5. Assemble and Bake
Pour half of bread batter into loaf pan. Sprinkle half of apple mixture. Add remaining batter and top with remaining apples. Press apple layer into batter.
Bake 50-60 minutes or until toothpick comes out with moist crumbs. Cover with foil if top browns too quickly.
6. Cool and Glaze
Cool bread in pan 15-20 minutes, then transfer to wire rack. Whisk powdered sugar and milk to desired thickness. Drizzle glaze over cooled bread.
