Sweet Potato Pie

11/2 cups mashed sweet potatoes (about 2 medium sweet potatoes)
1/2 cup unsalted butter, softened
1 cup granulated sugar
1/2 cup milk
2 large eggs, beaten
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon salt
1 unbaked 9-inch pie crust
Preheat the oven to 350°F (175°C).
Pierce the sweet potatoes with a fork and microwave them until soft, or roast them in the oven until tender.
Remove the skins and mash the sweet potatoes in a bowl until smooth. Set aside.
In a large mixing bowl, cream the butter and sugar together until light and fluffy.
Add the mashed sweet potatoes, milk, beaten eggs, vanilla extract, cinnamon, nutmeg, and salt. Mix well.
Pour the mixture into the unbaked pie crust and smooth the top.
Bake the pie for 55 to 60 minutes, or until the filling is set and the crust is golden brown.
Allow the pie to cool completely before slicing and serving.
