Best Raspberry and White Chocolate Blondies

1/2 cup unsalted butter (1 stick), melted
1 cup (200g) light brown sugar
1 egg
1 tbsp vanilla extract
1 1/4 cup (180g) all-purpose flour
1 tsp baking powder
1/2 tsp salt
1 cup raspberries
1/2 cup chopped white chocolate
Preheat your oven to 350°F. Grease or line an 8×8-inch square baking dish (a 9×9 dish works too).
In a stand mixer with the paddle attachment, mix together the melted butter, light brown sugar, egg, and vanilla extract until very smooth, about 2-3 minutes.
Add the flour, baking powder, and salt to the wet mixture, and mix until just combined. Be careful not to over mix.
Gently fold in the raspberries and chopped white chocolate.
Pour the batter into the prepared baking pan.
Bake for 28-35 minutes, or until the top is slightly golden brown.
Allow the blondies to cool completely in the pan before cutting into squares.
