Classic Diner-Style Patty Melt

Ingredients:

For the Patties:
1 pound ground beef (ensure it’s halal)
1 teaspoon salt
1/2 teaspoon black pepper
For the Caramelized Onions:
2 large onions, thinly sliced
1 tablespoon butter
For the Assembly:
8 slices of Texas toast
4 slices of Monterey Jack cheese
4 slices of American cheese
Creamy pepper sauce (recipe below)
For the Creamy Pepper Sauce:
1/2 cup mayonnaise
1 tablespoon ketchup
1 tablespoon creamy horseradish
1/2 teaspoon paprika
1/4 teaspoon garlic powder
1/4 teaspoon black pepper

Instructions:

Begin by making the creamy pepper sauce: mix all sauce ingredients in a small bowl and set aside.
Caramelize the onions: melt butter in a pan over medium heat, add onions, and cook until soft and golden, about 15-20 minutes. Set aside.
Form the beef into 4 oval patties. Season with salt and pepper. Cook the patties in a skillet over medium-high heat to your desired doneness.
To assemble, spread a generous amount of creamy pepper sauce on one side of each slice of Texas toast. Place a slice of American cheese on four slices of bread, add a patty, top with caramelized onions, then a slice of Monterey Jack cheese, and finally another slice of bread (sauce side down).
Cook the sandwiches in a skillet over medium heat until the bread is toasted and the cheese is melted, flipping once.
Serve hot.
