Philly Cheesesteak Sandwiches with Fries

Ingredients:
For the Cheesesteak Sandwiches:
1 lb ribeye steak, thinly sliced
2 tablespoons vegetable oil
1 large onion, thinly sliced
1 green bell pepper, thinly sliced (optional)
1/2 teaspoon salt
1/4 teaspoon black pepper
8 slices provolone cheese or white American cheese
4 soft hoagie rolls
2 tablespoons unsalted butter, softened
For the Fries:
1 lb russet potatoes, cut into thin fries
2 tablespoons olive oil
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon paprika (optional)
Directions:
1. Prepare the Fries 🍟
Preheat the oven to 425°F. Line a baking sheet with parchment paper.
In a large bowl, toss the sliced potatoes with olive oil, garlic powder, salt, black pepper, and paprika.
Spread the fries evenly on the baking sheet in a single layer.
Bake for 25-30 minutes, flipping halfway, until crispy and golden brown.
2. Cook the Onions and Peppers 🧅
Heat 1 tablespoon of vegetable oil in a large skillet over medium heat.
Add the sliced onions and bell pepper (if using). Sauté for 6-8 minutes until softened and lightly caramelized. Remove and set aside.
3. Cook the Ribeye 🥩
In the same skillet, add the remaining 1 tablespoon of vegetable oil.
Season the thinly sliced ribeye steak with salt and black pepper.
Cook the steak in batches over medium-high heat for 2-3 minutes per batch, until browned and tender. Stir occasionally.
4. Assemble the Cheesesteaks 🧀
Butter the inside of each hoagie roll and lightly toast them on a skillet or under a broiler until golden.
Place the cooked ribeye steak onto each toasted hoagie roll. Top with caramelized onions, peppers, and 2 slices of cheese per sandwich.
Place the assembled sandwiches back in the skillet (or under the broiler) for 1-2 minutes to melt the cheese.
5. Serve and Enjoy 🍴
Plate the cheesesteak sandwiches with the crispy baked fries on the side.
