Ground Beef & Rice Burrito Bowls
Ingredients:
1 lb ground beef
1 cup white or brown rice, cooked
1 packet taco seasoning
1/2 cup water
1 tablespoon olive oil
1 cup shredded cheddar cheese
1 cup lettuce, shredded
1/2 cup salsa
1/2 cup guacamole
1/4 cup sour cream (optional)
1/4 cup chopped green onions (optional)
Directions:
Cook the Rice: Prepare the rice according to package instructions and set aside.
Cook the Ground Beef: In a large skillet, heat olive oil over medium heat. Add the ground beef and cook until browned, breaking it apart as it cooks. Drain any excess fat.
Season the Beef: Add the taco seasoning and water to the skillet with the cooked beef. Stir to combine and simmer for 3-5 minutes, or until the mixture thickens.
Assemble the Burrito Bowls: In each bowl, start with a base of cooked rice. Add a generous portion of the seasoned ground beef.
Add Toppings: Top with shredded cheddar cheese, lettuce, salsa, guacamole, sour cream, and chopped green onions, if desired.
Serve: Serve immediately, and enjoy a hearty, delicious burrito bowl.
