Ingredients:
2 cups corn kernels (fresh, frozen, or canned)
1/4 cup mayonnaise
1/4 cup sour cream
1 tablespoon lime juice
1 teaspoon chili powder (adjust to taste)

1/2 teaspoon ground cumin
1/4 teaspoon cayenne pepper (optional, for extra heat)
Salt and pepper to taste
1/2 cup crumbled queso fresco or cotija cheese (for garnish)
1 tablespoon fresh cilantro, chopped (for garnish)
1/2 small red onion, finely diced (optional)
1 jalapeño, finely chopped (optional, for extra spice)
1 tablespoon hot sauce (optional)
Directions:
1. Prepare the Corn:
If using fresh corn, cut the kernels off the cob.
For frozen corn, thaw and drain any excess moisture.
For canned corn, drain and rinse the kernels thoroughly.
2. Make the Spicy Sauce:
In a medium bowl, combine the mayonnaise, sour cream, lime juice, chili powder, smoked paprika, cumin, cayenne pepper (if using), salt, and pepper.
