Jalapeño Cheddar Bread

4 tablespoons vegetable oil
½ cup white sugar
4 cups shredded Cheddar cheese
2 cups hot water
1 ½ teaspoons salt
¾ cup minced jalapeño peppers (seeds removed for less heat)
3 (.25 ounce) packages active dry yeast
8 cups all-purpose flour
Instructions:
Prepare the yeast mixture:
In a small bowl, combine the hot water (about 110°F) and the sugar. Stir until the sugar dissolves.
Sprinkle the active dry yeast over the water and let it sit for about 5-10 minutes until it becomes frothy.
Mix the dough:
In a large mixing bowl, combine the flour and salt.
Add the yeast mixture, vegetable oil, shredded Cheddar cheese, and minced jalapeños to the flour mixture.
Stir to combine and then knead the dough for about 8-10 minutes on a lightly floured surface until it becomes smooth and elastic.
Let the dough rise:
Place the dough in a greased bowl, cover with a clean towel, and let it rise in a warm place for about 1-1.5 hours, or until it has doubled in size.
Shape the dough:
Punch down the dough and divide it into two equal portions. Shape each portion into a loaf.
Place the loaves into greased loaf pans, cover them with a towel, and let them rise for another 30-45 minutes, or until the loaves have doubled in size.
Bake the bread:
Preheat your oven to 350°F (175°C).
Once the dough has risen, bake the loaves in the preheated oven for 30-35 minutes, or until the bread is golden brown on top and sounds hollow when tapped on the bottom.
Cool and serve:
Let the bread cool in the pans for 5-10 minutes, then transfer it to a wire rack to cool completely.
