Crockpot Cowboy Soup

Ingredients:
– 1 pound ground beef
– 1 medium onion, chopped
– 3 cloves garlic, minced
– 2 cups diced potatoes
– 1 can (15 oz) black beans, drained and rinsed
– 1 can (15 oz) corn, drained
– 1 can (15 oz) diced tomatoes
– 2 cups beef broth
– 1 tablespoon chili powder
– 1 teaspoon cumin
– Salt and pepper to taste
– Optional toppings: shredded cheese, sour cream, chopped green onions

Instructions:
**Step 1: Brown the Beef:**
In a skillet, brown the ground beef over medium heat until fully cooked. Drain excess fat and transfer to the crockpot.

**Step 2: Add Vegetables:**
Add the chopped onion, minced garlic, diced potatoes, black beans, corn, and diced tomatoes to the crockpot.

**Step 3: Pour in Broth:**
Add the beef broth, chili powder, cumin, salt, and pepper. Stir to combine all ingredients well.

**Step 4: Cook:**
Cover and cook on low for 6-8 hours or on high for 3-4 hours until the potatoes are tender.

Ladle the soup into bowls and top with shredded cheese, sour cream, and green onions if desired.
