Beef Barley Soup

A comforting, hearty soup filled with tender beef, chewy barley, and flavorful vegetables—perfect for a chilly day.

Ingredients:
1 lb beef stew meat, cubed
1 tbsp olive oil
1 onion, diced
3 carrots, chopped
2 celery stalks, chopped
3 cloves garlic, minced
6 cups beef broth
1/2 cup pearl barley
1 tsp dried thyme
Salt and pepper to taste
Directions:
Sear Beef: In a large pot, heat olive oil over medium heat. Brown the beef on all sides. Remove and set aside.
Sauté Vegetables: In the same pot, add onions, carrots, and celery. Cook until softened, about 5 minutes. Add garlic and cook for 1 minute more.
Simmer Soup: Pour in beef broth, return the beef to the pot, and add barley and thyme. Bring to a boil, then reduce heat to a simmer. Cover and cook for 1 hour, or until beef and barley are tender.
Season & Serve: Taste and adjust seasoning with salt and pepper. Serve hot.
