Caramelized Chicken with Creamy Pasta
Ingredients:
– 4 skin-on chicken thighs
– Salt and pepper, to taste
– 2 tablespoons olive oil
– 1 onion, chopped
– 2 cloves garlic, minced
– 1 cup chicken broth
– 1 cup heavy cream
– 1/2 cup grated Parmesan cheese
– 8 oz pasta of your choice
– Fresh parsley, chopped for garnish
Directions:
Step 1: Season the chicken
Season the chicken thighs with salt and pepper on both sides.
Step 2: Sear the chicken
Heat olive oil in a large skillet over medium-high heat. Add the chicken thighs skin-side down and cook until the skin is caramelized and crispy, about 5-6 minutes per side. Remove chicken from the skillet and set aside.
Step 3: Make the sauce
In the same skillet, add the chopped onion and garlic. Sauté until softened. Pour in the chicken broth and heavy cream. Bring to a simmer and let it reduce slightly. Stir in the Parmesan cheese until melted.
Step 4: Cook the pasta
Cook the pasta according to package instructions. Drain and set aside.
Step 5: Combine everything
Add the cooked pasta to the skillet with the creamy sauce. Toss to coat the pasta evenly. Place the caramelized chicken thighs on top.
