Classic Beef Stew
Ingredients
1.5 lbs beef stew meat, cut into cubes
Salt and black pepper, to taste
2 tbsp olive oil
1 large onion, diced
3 cloves garlic, minced
4 cups beef broth
1 cup water
1 tbsp tomato paste
1 tsp Worcestershire sauce
4 large carrots, sliced
3 medium potatoes, cut into chunks
1 cup green beans, trimmed and halved
1 tsp dried thyme
1 tsp dried rosemary
1 bay leaf

Brown the Beef: Season the beef cubes with salt and black pepper. In a large pot or Dutch oven, heat olive oil over medium-high heat. Add the beef and brown on all sides. Remove and set aside.
Sauté the Onion and Garlic: In the same pot, add diced onion and cook until softened, about 3-4 minutes. Add minced garlic and cook for another minute until fragrant.
Add Broth and Seasoning: Stir in beef broth, water, tomato paste, Worcestershire sauce, thyme, rosemary, and bay leaf. Return the beef to the pot. Bring to a boil, then reduce heat to low, cover, and let simmer for 1 hour.
Add Vegetables: Add the carrots, potatoes, and green beans to the pot. Continue simmering, covered, for another 30-40 minutes, or until the beef and vegetables are tender.
Serve: Remove the bay leaf, adjust seasoning with salt and pepper if needed, and garnish with fresh parsley. Serve hot with crusty bread. Enjoy!
