Ingredients
4 bone-in, skin-on chicken thighs (or breasts)
1 lb baby potatoes, halved
1/4 cup olive oil
1 tablespoon minced garlic (about 3 cloves)
1 teaspoon Italian seasoning
1/2 teaspoon paprika
Salt and pepper, to taste
1/2 cup grated Parmesan cheese
2 tablespoons fresh parsley, chopped (for garnish)
Instructions
Preheat the Oven:
Preheat your oven to 400°F (200°C).
Prepare the Chicken and Potatoes:
In a large mixing bowl, combine olive oil, minced garlic, Italian seasoning, paprika, salt, and pepper.
Add the chicken thighs and baby potatoes to the bowl. Toss until everything is well coated with the oil and seasoning mixture.
