CrockPot Chicken and Dumplings 🍲
Ingredients
For the Chicken and Sauce:
1 medium yellow onion, finely diced
1 (10-ounce) can cream of mushroom soup
1 (10-ounce) can cheddar cheese soup
2 teaspoons dried thyme
4 cups chicken broth
1.5 pounds boneless, skinless chicken breasts or thighs
Salt and pepper to taste
For the Dumplings:
2 cups all-purpose flour
1 tablespoon baking powder
1 teaspoon salt
½ teaspoon garlic powder (optional)
¾ cup milk
¼ cup unsalted butter, melted
1 tablespoon fresh parsley, chopped (for garnish, optional)
Instructions
Prepare the Chicken Mixture: In your CrockPot, combine the diced onion, cream of mushroom soup, cheddar cheese soup, dried thyme, chicken broth, and the chicken. Season with salt and pepper. Stir to combine.
Cook the Chicken: Cover the CrockPot and cook on low for about 6-8 hours or on high for 4-6 hours, until the chicken is cooked through and tender.
Make the Dumplings: About 30 minutes before the chicken is done, prepare the dumpling batter. In a large bowl, whisk together the flour, baking powder, salt, and garlic powder (if using). In another bowl, combine the milk and melted butter. Pour the wet ingredients into the dry ingredients and stir until just combined.
Add Dumplings to the CrockPot: After the chicken is cooked, remove it from the CrockPot and shred it with two forks. Return the shredded chicken to the pot. Drop spoonfuls of the dumpling batter over the chicken mixture. Cover the CrockPot and cook on high for an additional 30-40 minutes, until the dumplings are fluffy and cooked through.
Serve: Garnish with chopped parsley if desired. Serve warm and enjoy!
