Chocolate Lava Brownie Cookies
Ingredients:
1 cup semi-sweet chocolate chips (melted)
½ cup unsalted butter, softened
¾ cup granulated sugar
½ cup brown sugar
2 large eggs
1 tsp vanilla extract
1 cup all-purpose flour
¼ cup unsweetened cocoa powder
½ tsp baking powder
¼ tsp salt
½ cup semi-sweet chocolate chips (for filling)
Instructions:
Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a bowl, beat butter, granulated sugar, and brown sugar until creamy. Add eggs and vanilla, mixing until smooth.
Melt 1 cup of chocolate chips, then mix into the batter until well combined.
In another bowl, whisk together flour, cocoa powder, baking powder, and salt. Gradually add to the wet mixture, stirring until just combined.
Scoop dough and flatten slightly. Place a few chocolate chips in the center, then fold dough around to form a ball, sealing the chocolate inside.
Place cookies on the baking sheet and bake for 10-12 minutes, until edges are set but centers remain soft. Let cool slightly before serving.
Notes:
For an extra gooey center, use chunks of chocolate instead of chips for the filling!
