Beef & Ale Stew with Root Veg

Description:
Slow-cooked beef stew infused with ale and thyme, loaded with root vegetables — hearty and warming.

Ingredients:
• 600g stewing beef
• 1 onion, chopped
• 2 carrots, chopped
• 1 parsnip, diced
• 1 tbsp flour
• 1.5 cups dark ale
• 2 cups beef stock
• Salt, pepper, thyme

Instructions:
1. Brown beef, coat in flour.
2. Sauté onions, add everything to a pot.
3. Simmer gently 2–2.5 hrs.
4. Serve with mash or crusty bread.
