Baked Reuben Sandwiches
Ingredients:
8 slices rye bread
1/2 lb thinly sliced corned beef
8 slices Swiss cheese
1 cup sauerkraut, drained well
1/2 cup Thousand Island dressing (or Russian dressing)
4 tbsp butter, softened
Instructions:
Preheat the Oven:
Preheat your oven to 350°F (175°C).
Assemble the Sandwiches:
Lay out the rye bread slices on a flat surface. Spread about a tablespoon of Thousand Island dressing on each slice of bread.
Place a slice of Swiss cheese on four of the slices, followed by a layer of corned beef, and then a small portion of sauerkraut. Top with another slice of Swiss cheese, then place another slice of rye bread on top to form a sandwich.
Butter the Bread:
Spread softened butter on the top and bottom of each sandwich.
Bake:
Place the sandwiches on a baking sheet lined with parchment paper. Bake for 10-12 minutes, flipping halfway through, until the bread is golden brown and the cheese is melted.
Serve:
Remove from the oven, let cool slightly, and cut each sandwich in half. Serve warm!
