Homemade Reuben Bake

Ingredients:

– 1 loaf of rye bread, cubed
– 1 pound corned beef, sliced
– 1 cup sauerkraut, drained
– 1 cup Swiss cheese, shredded
– 1 cup Thousand Island dressing
– 4 large eggs
– 1 cup milk
– 1 teaspoon garlic powder
– 1 teaspoon onion powder
– Salt and pepper to taste
– Fresh parsley for garnish (optional)

Instructions:

1. Preheat the Oven:

– Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking dish.

2. Prepare the Bread Layer:

– Place the cubed rye bread evenly in the bottom of the greased baking dish.

3. Layer the Ingredients:

– On top of the bread, layer the sliced corned beef evenly.
– Spread the drained sauerkraut over the corned beef.
– Sprinkle the shredded Swiss cheese on top of the sauerkraut.

4. Make the Egg Mixture:

– In a large bowl, whisk together the eggs, milk, garlic powder, onion powder, salt, and pepper until well combined.

5. Combine and Pour:

– Pour the egg mixture evenly over the layered ingredients in the baking dish.
– Drizzle the Thousand Island dressing over the top, spreading it gently with a spatula to cover.

6. Bake the Dish:

– Bake in the preheated oven for 45-50 minutes, or until the egg is set and the top is golden brown.

7. Cool and Serve:

– Allow the Reuben Bake to cool for a few minutes before slicing.
– Garnish with fresh parsley if desired.
