Cheesy Beef and Potato Egg Curry
Ingredients
For the Curry:
1 pound ground beef
2 cups diced potatoes
1 small onion, diced
2 cloves garlic, minced
1 tablespoon curry powder
1 teaspoon cumin
1/2 teaspoon paprika
Salt and pepper, to taste
1 cup heavy cream
4 large eggs
1 cup shredded cheddar cheese
For Garnish:
Fresh cilantro or parsley (optional)
Instructions
Step 1: Cook the Beef and Potatoes
Sauté Onions and Garlic: In a large skillet, heat a bit of oil over medium heat. Add diced onion and garlic, cooking until softened.
Brown the Beef: Add the ground beef to the skillet. Cook until browned, breaking it apart with a spoon. Season with salt, pepper, curry powder, cumin, and paprika.
Add Potatoes: Stir in the diced potatoes and cook for about 5-7 minutes, until they begin to soften.
Step 2: Make the Curry
Add Cream: Pour in the heavy cream, stirring to combine. Allow the mixture to simmer for about 10-15 minutes, until the potatoes are tender and the sauce thickens. Stir occasionally.
Step 3: Add the Eggs
Create Wells: Once the potato and beef mixture is ready, make small wells in the curry for the eggs.
Crack Eggs: Carefully crack an egg into each well. Cover the skillet and cook for about 5-7 minutes, until the eggs are cooked to your liking (runny or firm).
Step 4: Add Cheese
Top with Cheese: Sprinkle shredded cheddar cheese over the entire dish. Cover again and let it melt for a couple of minutes.
Step 5: Serve
Plate the Dish: Serve hot, garnished with fresh cilantro or parsley if desired.
