Country Ranch Green Beans and Potatoes with Bacon

Ingredients:
1 lb fresh green beans, trimmed
1 lb baby potatoes, halved (red or Yukon gold work great)
6 slices bacon, chopped
1 packet (1 oz) ranch seasoning mix
2 tablespoons olive oil
Salt and pepper, to taste
1 tablespoon garlic, minced
1 tablespoon fresh parsley, chopped (for garnish)
Instructions:
Step 1: Cook the Bacon
Cook Bacon:
In a large skillet over medium heat, cook the chopped bacon until crispy, about 6-8 minutes. Remove the bacon and place it on a paper towel-lined plate to drain, leaving the bacon drippings in the skillet.
Step 2: Prepare the Potatoes
Boil the Potatoes:
Bring a pot of salted water to a boil and add the halved potatoes. Cook for about 10-12 minutes or until they are fork-tender. Drain and set aside.
