Crispy Cheeseburger Egg Rolls with Special Sauce

Ingredients:
For the egg rolls:
1 lb ground beef
1 small onion, finely diced
1 cup shredded cheddar cheese
1/2 cup pickles, chopped
1 tablespoon ketchup
1 tablespoon mustard
1 teaspoon garlic powder
1 teaspoon salt
1 teaspoon pepper
12 egg roll wrappers
Vegetable oil for frying
For the special sauce:
1/2 cup mayonnaise
2 tablespoons ketchup
1 tablespoon mustard
1 tablespoon pickle relish
1 teaspoon vinegar
Salt and pepper to taste

Directions:
In a large skillet over medium heat, cook the ground beef and diced onion until the beef is browned and fully cooked. Drain excess fat.
Stir in the shredded cheddar cheese, pickles, ketchup, mustard, garlic powder, salt, and pepper. Mix until well combined. Remove from heat and allow to cool slightly.
Lay out one egg roll wrapper at a time, placing about 2 tablespoons of the cheeseburger mixture in the center of each wrapper. Fold the sides in and roll tightly, sealing the edges with a little water.
In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C). Fry the egg rolls in batches, about 3-4 minutes each, or until golden brown and crispy.
Remove the egg rolls from the oil and drain on paper towels.
For the special sauce, mix the mayonnaise, ketchup, mustard, pickle relish, vinegar, salt, and pepper together in a small bowl.
Serve the egg rolls hot with the special sauce for dipping!
