Crockpot Pierogi Casserole with Kielbasa
Ingredients:
3 packages of Mrs. T’s Cheddar Pierogies
4 cups chicken broth
1 (8-ounce) block of cream cheese
1 cup shredded cheddar cheese
1 pound kielbasa, sliced
Salt and pepper, to taste
Instructions:
1. Combine Ingredients in the Crockpot:
In a 4-6 quart crockpot, combine 3 cups of chicken broth, the frozen pierogies, sliced kielbasa, and shredded cheddar cheese. Stir to ensure everything is evenly mixed.
2. Cook the Casserole:
Set your crockpot to cook on high for 3-4 hours, or on low for 6 hours. This extended cooking time helps all the flavors meld together beautifully.
3. Prepare the Cream Cheese Mixture:
About 30 minutes before the casserole is done, warm the cream cheese with the remaining 1 cup of chicken broth. You can do this in a microwave or on the stovetop. Once warmed, whisk until smooth and creamy.
4. Final Assembly:
Pour the creamy mixture into the crockpot, stirring thoroughly to combine. Top with the remaining shredded cheddar cheese. Cover the crockpot and cook on low for an additional 30 minutes to let the cheese melt and the flavors meld.
5. Serve:
Dish out the casserole while it’s hot, garnishing with sliced green onions if desired. This adds a lovely color and a mild crunch, perfectly complementing the rich flavors.
