Chimichangas

𝐈𝐧𝐠𝐫𝐞𝐝𝐢𝐞𝐧𝐭𝐬:
🥩 1 lb ground beef
🧅 1 onion, chopped
🧄 2 cloves garlic, minced
🌶️ 1 bell pepper, chopped
🌿 1 teaspoon ground cumin
🌶️ 1 teaspoon chili powder
🍅 1 cup salsa
🌯 8 large flour tortillas
🧀 1 cup shredded cheddar cheese
🧀 1 cup shredded Monterey Jack cheese
🧈 Vegetable oil (for frying)
🍅 1 cup queso or cheese sauce
🌿 Fresh cilantro, chopped (for garnish)

𝐃𝐢𝐫𝐞𝐜𝐭𝐢𝐨𝐧𝐬:

🌟 Preheat oil: In a deep fryer or large, deep skillet, heat vegetable oil to 350°F (175°C).
🍳 Cook beef: In a large skillet over medium heat, cook the ground beef until browned. Drain excess fat.
🧅 Add veggies: Add chopped onion, minced garlic, and bell pepper to the skillet. Cook until softened.
🌿 Season: Stir in ground cumin, chili powder, and salsa. Let the mixture simmer for a few minutes.
🌯 Assemble chimichangas: Lay out tortillas and spoon the beef mixture down the center of each. Sprinkle with shredded cheddar and Monterey Jack cheese. Fold the sides in and roll up the tortillas tightly.
🍳 Fry: Carefully place the rolled tortillas seam-side down into the hot oil. Fry until golden brown and crispy, about 3-4 minutes per side. Remove and drain on paper towels.
🧀 Top with cheese sauce: Warm the queso or cheese sauce and pour it over the chimichangas.
🌿 Garnish: Sprinkle with fresh cilantro and serve hot.
