Baked Chicken Ricotta Meatballs with Spinach Alfredo Sauce

Ingredients:
1 lb ground chicken
1/2 cup ricotta cheese
1/4 cup panko breadcrumbs
1/4 cup parmesan cheese (grated)
1 egg
1 tsp garlic powder
1 tsp dried basil
Salt and pepper to taste
Spinach Alfredo Sauce:
2 tbsp olive oil
2 garlic cloves (minced)
2 cups fresh spinach (chopped)
1 1/2 cups heavy cream
1/2 cup parmesan cheese (grated)
Salt and pepper to taste
Instructions:
1️⃣ Preheat oven to 375°F. In a bowl, mix ground chicken, ricotta, panko breadcrumbs, parmesan, egg, garlic powder, dried basil, salt, and pepper.
2️⃣ Shape the mixture into meatballs and place on a greased baking sheet. Bake for 15-20 minutes, until golden and cooked through.
3️⃣ While the meatballs bake, heat olive oil in a skillet. Sauté garlic until fragrant, then add spinach and cook until wilted.
4️⃣ Stir in heavy cream and parmesan, simmering until the sauce thickens (about 3-4 minutes). Season with salt and pepper.
5️⃣ Once the meatballs are done, add them to the skillet with the Alfredo sauce and cook for 2-3 minutes, coating them in the sauce.
Notes:
Top with extra parmesan and fresh basil for a finishing touch!
