Delmonico Potatoes

Ingredients:

20 oz. Simply Potatoes (1 bag)
3/4 cup milk (1% or any kind)
3/4 cup whipping cream
1 teaspoon kosher salt
1 teaspoon dry mustard
Generous dash of pepper and nutmeg
1 cup shredded sharp cheddar cheese
3 tablespoons butter (divided into 6 slices)
Paprika (for sprinkling)
Directions:

Preparation: Generously butter an 8 x 8-inch casserole dish. Evenly spread the entire bag of Simply Potatoes in the dish.
Sauce Creation: In a medium saucepan over medium-high heat, combine milk, whipping cream, salt, dry mustard, pepper, and nutmeg. Whisk and stir until the mixture is nearly boiling.
Adding Cheese: Reduce heat to low, add the shredded cheddar cheese, and stir until completely melted.
Combining: Pour the creamy cheese mixture over the potatoes in the casserole dish. Allow it to cool slightly.
Final Touches: Dot the top with butter slices and sprinkle with paprika. Cover the dish tightly with plastic wrap.
Refrigeration: Place the casserole in the refrigerator for 12 hours or overnight to let the flavors meld.
Baking: Preheat the oven to 350°F (175°C). Remove the plastic wrap and bake the casserole uncovered for 45 minutes, until the top is golden and the sauce is bubbling.
