Nutritious Vegetable Goulash with Beef

Ingredients:

1 lb beef stew meat, cubed
2 tbsp olive oil
1 onion, chopped
3 garlic cloves, minced
2 carrots, sliced
2 bell peppers (any color), diced
2 medium potatoes, cubed
1 zucchini, diced
1 can (14 oz) diced tomatoes
2 cups beef broth
2 tsp paprika
1 tsp cumin
1 tsp dried thyme
Salt and pepper, to taste
Fresh parsley, chopped (for garnish)

Directions:

Heat olive oil in a large pot or Dutch oven over medium-high heat. Add the beef cubes and sear until browned on all sides. Remove and set aside.
In the same pot, sauté the onion and garlic until fragrant, about 2-3 minutes.
Add the carrots, bell peppers, potatoes, and zucchini. Cook for 5 minutes, stirring occasionally.
Stir in the seared beef, diced tomatoes, beef broth, paprika, cumin, thyme, salt, and pepper. Mix well.
Bring the mixture to a boil, then reduce heat to low. Cover and simmer for 1 ½ hours, or until the beef is tender and the vegetables are cooked through.
Taste and adjust seasonings as needed.
Serve hot, garnished with fresh parsley. Enjoy a hearty and healthy meal!
