Crockpot Beef Bites with Potatoes recipe
Ingredients:
2 pounds beef stew meat or chuck roast, cut into bite-sized chunks
1 ½ pounds baby potatoes (or cubed russet potatoes)
1 medium onion, diced
3 garlic cloves, minced
1 cup beef broth
2 tablespoons Worcestershire sauce
1 tablespoon soy sauce
2 tablespoons olive oil
1 teaspoon smoked paprika
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon dried thyme or rosemary
Salt and black pepper to taste
2 tablespoons cornstarch (optional, for thickening)
Instructions:
1. Sear the Beef (Optional):
Heat olive oil in a skillet over medium-high heat. Sear the beef bites for 2-3 minutes until browned on all sides (this step adds extra flavor but can be skipped).
2. Layer the Ingredients:
Place the baby potatoes and diced onions in the bottom of the Crockpot.
Add the beef bites on top.
3. Season:
Sprinkle smoked paprika, garlic powder, onion powder, dried thyme/rosemary, salt, and pepper over the meat and potatoes.
4. Add Liquids:
In a small bowl, mix the beef broth, Worcestershire sauce, soy sauce, and minced garlic. Pour the mixture over the beef and potatoes.
5. Cook:
Cover and cook on low for 7-8 hours or high for 4-5 hours, until the beef is tender and the potatoes are cooked through.
6. Thicken the Sauce (Optional):
For a thicker sauce, mix 2 tablespoons of cornstarch with 2 tablespoons of water to make a slurry. Add it to the Crockpot during the last 30 minutes of cooking.
7. Serve:
Stir everything gently, garnish with fresh parsley (optional), and serve warm.
