Beef Shepherd’s Pie
Ingredients
1 lb ground beef
1 onion, chopped
2 cloves garlic, minced
2 cups frozen mixed vegetables (peas, carrots, corn)
1/4 cup beef broth
1 tablespoon Worcestershire sauce
2 tablespoons tomato paste
1 teaspoon dried thyme
Salt and pepper to taste
4 cups mashed potatoes (prepared in advance)
2 tablespoons butter (for topping)
Instructions
Cook the beef: In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
Prepare the filling: Add the chopped onion and minced garlic to the skillet with the beef. Cook for 2-3 minutes, until softened. Stir in the frozen mixed vegetables, beef broth, Worcestershire sauce, tomato paste, thyme, salt, and pepper. Let the mixture simmer for 5-7 minutes until the vegetables are tender and the liquid is mostly absorbed.
Assemble the pie: Transfer the beef and vegetable mixture into a 9×13-inch baking dish. Spread the prepared mashed potatoes evenly over the top, smoothing them with a spatula.
Top and bake: Dot the mashed potatoes with butter. Preheat the oven to 375°F (190°C) and bake for 20-25 minutes, until the top is golden and the edges are bubbling.
Serve: Let the Shepherd’s Pie rest for 5 minutes before serving.
