Slow Cooker Beef Bourguignon

Ingredients:

2 lbs beef chuck (cut into 1.5-inch cubes)
4 slices turkey bacon (diced)
3 carrots (sliced)
2 cups baby potatoes (halved)
1 onion (chopped)
3 cloves garlic (minced)
2 cups beef broth
3 tbsp tomato paste
1 tbsp Worcestershire sauce
1 tsp dried thyme
2 bay leaves
1/4 cup all-purpose flour
Salt and pepper to taste
2 tbsp olive oil

Directions:

Heat olive oil in a skillet over medium-high heat. Sear the beef cubes until browned on all sides. Transfer to the slow cooker.
In the same skillet, cook the turkey bacon until crispy. Add it to the slow cooker.
Add carrots, potatoes, onion, and garlic to the slow cooker.
In a bowl, mix beef broth, tomato paste, Worcestershire sauce, thyme, bay leaves, flour, salt, and pepper until well combined. Pour the mixture over the beef and vegetables.
Cover and cook on LOW for 8 hours or HIGH for 4-5 hours until the beef is tender and the sauce has thickened.
Remove bay leaves before serving and garnish with fresh parsley if desired. Serve hot.
