Ingredients

6 bone-in, skin-on chicken thighs
1 tablespoon olive oil
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon garlic powder
1/2 teaspoon smoked paprika
For the Sauce:

1/2 cup orange juice (freshly squeezed or store-bought)
Zest of 1 orange
1/2 cup dried cranberries
1/4 cup honey or maple syrup
2 tablespoons soy sauce
2 teaspoons Dijon mustard
2 cloves garlic, minced
1/2 teaspoon dried thyme

Fresh rosemary or thyme sprigs

Instructions

1️⃣ Preheat the Oven

Preheat your oven to 400°F (200°C). Lightly grease a 9×13-inch baking dish or ovenproof skillet.
2️⃣ Season the Chicken

Pat the chicken thighs dry with a paper towel. Rub them with olive oil and season with salt, pepper, garlic powder, and smoked paprika.
3️⃣ Prepare the Sauce

In a medium bowl, whisk together the orange juice, orange zest, dried cranberries, honey, soy sauce, Dijon mustard, minced garlic, and dried thyme.
4️⃣ Sear the Chicken (Optional)

For extra flavor, heat a large skillet over medium-high heat and sear the chicken thighs, skin-side down, for 2-3 minutes until golden.
5️⃣ Bake the Chicken

Place the chicken thighs in the prepared baking dish, skin-side up. Pour the orange cranberry sauce evenly over the chicken.
Bake uncovered for 35-40 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the sauce is bubbling and slightly thickened.
