Spicy Cajun Chicken Alfredo Pasta

Ingredients😋

1 lb chicken breast, sliced into strips
1 tbsp Cajun seasoning (more if desired)
Salt and black pepper, to taste
2 tbsp olive oil
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 small onion, thinly sliced
3 garlic cloves, minced
1 cup heavy cream
1/2 cup chicken broth
1/2 cup Parmesan cheese, grated
8 oz pasta (such as penne or fettuccine)
Fresh parsley, chopped (for garnish)

Directions😋

Cook the Pasta: In a large pot of salted boiling water, cook pasta according to package directions until al dente. Drain and set aside.
Season the Chicken: In a bowl, toss chicken strips with Cajun seasoning, salt, and black pepper.
Sear the Chicken: In a large skillet over medium-high heat, add olive oil. Add chicken and cook for 4–5 minutes per side until golden brown and cooked through. Remove chicken from the skillet and set aside.

Sauté the Vegetables: In the same skillet, add bell peppers, onion, and garlic. Sauté until the vegetables are tender, about 3–4 minutes.
Make the Creamy Sauce: Lower the heat to medium and pour in the heavy cream and chicken broth. Bring to a gentle simmer, then stir in Parmesan cheese. Cook, stirring occasionally, until the sauce thickens slightly, about 3–5 minutes.
Combine: Add the cooked pasta and seared chicken back to the skillet, tossing to coat in the creamy Cajun sauce. Adjust seasoning if needed.
Serve: Garnish with fresh parsley and serve warm.
